If there was an ultimate comfort food club, this soup would be a member. Thick and creamy with crispy bacon, Italian sausage and cubed red potatoes. Your family and friends will love this recipe.
Ingredients
8 to 10 red potatoes cubed
32 0z. chicken broth
1lb. thick sliced bacon
1lb. Italian sausage
1 stick of salted butter
2 cups of chopped kale or chopped spinach
16oz. heavy cream
2 tablespoons of garlic powder
1 tablespoon kosher salt
1 tablespoon of course ground pepper
Directions
This recipe works great in a crockpot as well.
Boil cubed red potatoes in a medium sized soup pot. Boil until tender (When finished, drain into colander and return potatoes to the same soup pot.
In same pot, add chicken broth and set to low on a back burner.
In a separate pot, cook bacon and sausage (Cook bacon extra crispy as it will soften in the soup).
Add cooked bacon and sausage into soup pot with potatoes.
Add stick of butter to pot and simmer until melted.
Add garlic, salt, pepper and chopped kale or chopped spinach.
Add heavy cream and simmer soup until thoroughly heated.
Serve with fresh parsley and grated Parmesan cheese.
