Tortellini Bologna Soup

A delicious and comfortable soup loaded with Italian flavor. One of our favorites. A great recipe to share with your friends and family.




Ingredients

  • 1 lb. cooked Italian sausage

  • 32 oz. vegetable broth

  • 16 oz. beef broth

  • 1 14.5 oz. can fire roasted tomatoes or you can substitute a can of Rotel.

  • 2 tablespoons tomato paste

  • 2 tablespoon garlic paste or minced garlic

  • 1 bag of meat or cheese stuffed tortellini (Gluten-free pasta makes this a Gluten-free recipe

  • 2 tablespoons Worcestershire sauce

  • 3 cups of chopped spinach or arugula

  • 1 onion chopped

  • 1 tablespoon salted butter

  • 1 teaspoon each of basil, oregano, parsley and thyme

Directions

  1. Place butter and onion into a soup pot. cook onion until soft.

  2. Add tomato paste and beef broth to pot. Whisk until heated and blended.

  3. Add vegetable broth, cooked sausage and fire roasted tomatoes to pot.

  4. Add spices, Worcestershire sauce and arugula or spinach and bring to a slow rolling boil.

  5. Once you reach a slow boil, add tortellini and cook until tender.

  6. Serve and garnish with parsley and parmesan cheese.

Pro Tips

  • This is a great crockpot recipe as well.

  • Using fresh ingredients when possible will improve your results.
