Bacon & Collard Greens

A southern comfort food that makes a great side dish or you can make it a meal. Delicious crispy Bacon adds the perfect touch to this tasty dish.



Ingredients

  • 12 Ounce package thick sliced Bacon

  • Medium Onion finely chopped

  • 2 Teaspoons of Garlic Powder

  • 1 Head of Collard Greens or 1 head of Kale (Rinse, trim and chop Greens to your size

  • 3 Cups of Chicken Broth

  • 1 Level teaspoon of Cajun Seasoning

  • 1 Tablespoon of Sugar

  • 1/2 Teaspoon of Paprika

  • 1/4 Teaspoon of Cyan Pepper

  • Salt and Pepper to taste

Directions

  1. Cook Bacon in a large stockpot

  2. Cover cooked Bacon with Leafy Greens and allow to wilt

  3. Once greens are wilted, add Broth, Cajun Seasoning, Sugar, Paprika and Cyan Pepper.

  4. Cover and simmer for 60 minutes allowing the greens to cook down

  5. Drain excess liquid from pot and salt and pepper to taste

  6. Serve immediately
