South of the Border Stuffed Peppers

These delicious and savory Peppers are stuffed with meat, veggies and a perfect blend of south of the border spices. This recipe will impress your family and friends.


Ingredients

  • 4 Large Sweet Peppers halved and cleaned with stems removed.

  • 1 Pound of Ground Beef cooked.

  • 1 Package of your favorite Taco seasoning. Note: Most Store bought Taco Season Packages contain trace amounts of Gluten. To be Celiac safe and Gluten free, use our recipe for Fat Chef Taco Seasoning.

  • 1 Cup of cooked Instant Rice.

  • 1 Small Onion finely chopped

  • Fresh Cilantro chopped

  • 1 Small can of Corn (Optional)

  • 1 Small can of Green Chilies chopped.

  • 1 Can of Black Beans

  • 2 Cups of Shredded Taco Cheese Blend

Directions

  1. Preheat Crockpot to low, or Oven to 350 degrees depending on how you want to cook it..

  2. Mix taco seasoning with 1/4 cup of cold water and set aside.

  3. In a large bowl, combine Burger, Rice, Onion, Corn, Green Chiles, Black Beans and 1 cup of cheese.

  4. Pour Taco Seasoning Mixture over the ingredients in the bowl and mix all ingredients thoroughly with your hands.

  5. Fill each Pepper half with mixture to within 1/4 inch from the top to leave room for remainder of Cheese.

  6. Place a little Cheese on top of each pepper and lightly press cheese into mixture so it melts down into the pepper as it cooks.

  7. If you're using a Crockpot, place peppers in crockpot and slow cook for 6 to 8 hours or until it reaches an internal temperature of 145 degrees.

  8. If you're using an Oven, place peppers in an oven pan and cover with foil (Insert tooth picks into each pepper to prevent the foil from sticking to the cheese. Cook for 45 minutes or until internal temperature reaches 145 degrees. Uncover peppers and return to oven for another 10 minutes to brown the cheese.

  9. Garnish with the fresh chopped Cilantro before serving .
