One Pot Red Beans & Rice

A Cajun favorite New Orleans style in one pot with easy cleanup. A perfect blend of meat, beans and spices makes this a favorite. Serve over White Rice, then sit back and wait for the accolades.




Ingredients

  • 1 Tablespoon oil cooking Oil

  • 1 Onion Chopped

  • 1 Green Pepper seeded and chopped

  • 1 Package of Andouille chopped into medium size chunks (or Smoked Sausage or Kielbasa)

  • 2 Teaspoons garlic Powder or 3 Cloves of Garlic

  • 2 Teaspoons Cajun Seasoning

  • 1 Level teaspoon of Dried Oregano

  • 2 Cans of Red Beans (Drained & Rinsed)

  • 2 Cups of Chicken Broth

  • 1 Cup of White Rice (Uncooked)


Directions

  1. Heat oil in a large Stockpot

  2. Add Onion, Green Pepper, and sausage to pot

  3. Allow mixture to soften and brown.

  4. Add garlic, Oregano and Cajun Seasoning to mixture and blend with other ingredients

  5. Add Red beans and Chicken broth making sure rice is completely submerged

  6. Bring mixture to a low boil and allow to simmer until rice is cooked completely.

  7. Serve immediately in a bowl garnished with fresh parsley
