Simple Creamy Egg Salad

A simple lunch treat served on toast or buttery Town House crackers. One of my favorite comfort foods.


Ingredients

  • 8 Hard Boiled Eggs Chopped

  • 1/4 Cup Mayonnaise

  • 1/3 Cup Sour Cream

  • 1 Teaspoon Yellow Mustard

  • 1/4 Cup Green Onion Chopped or Yellow Onion chopped with chopped Chives added for color as pictured

  • Salt and Pepper to taste

  • 1/4 Teaspoon Paprika

Directions

  1. Whisk all ingredients except Eggs in a medium size bowl

  2. Add Eggs to mixture and blend all ingredients together.

  3. Serve immediately or refrigerate for use later.

Pro Tip: For easy to peel Eggs. Carefully place eggs in a pot of boiling water. Boil eggs for 15 minutes. Remove eggs to a bowl of water with ice. Allow eggs to rest in ice water for 15 minutes. Eggs are now ready to jump out of their shell.
