Shrimp & Cheddar Grits

Another southern classic. This dish originated in South Carolina as a breakfast dish to feed the Sailors before starting their day. This dish has worked it's way into the finest restaurants because it's simple and delicious.


Ingredients

Grits

  • 1 Cup of 5 minute Grits

  • 4 Cups of Water

  • 1/2 teaspoon of Salt

  • 3 tablespoons of Butter

  • 1/4 Cup Heavy Cream

  • 1.5 Cups of Shredded Cheddar Cheese

Shrimp

  • 6 Thick Slices of Bacon cut into 1" pieces

  • 1 Pound of large peeled and deveined Shrimp

  • 2 Teaspoons of Cajun Seasoning

  • 3 Green Onions chopped

  • 1 tablespoon of Minced Garlic

  • 1/4 Cup of Chicken Broth


Directions

  1. Add Bacon pieces to a skillet and cook on medium low heat.

  2. When bacon is almost finished add Shrimp to the Bacon and cook Shrimp for 1 minute on each side.

  3. When done, remove Shrimp and Bacon from heat and set aside. Drain as much grease from skillet as possible and keep on stove.

  4. Bring water to boil in a medium sauce pot.

  5. Add Grits and Salt to boiling water and cook for 5 minutes

  6. Add butter, Cream an Cheese to cooked Grits and blend.

  7. Add Cajun spice to Broth in a measuring cup and mix well.

  8. On medium heat add Broth mixture, Garlic and Green Onions to the Shrimp and Bacon skillet and simmer until all ingredients are heated thoroughly.

  9. Plate the Grits and Spoon the Shrimp and Bacon mixture over the Grits and serve.

Pro tip: For best results, try to time the completion of the Grits with the Bacon and Shrimp Mixture as Grits have a tendency to set up quickly.
