A combination of savory spices takes these fried potatoes to the next level.
Ingredients
3 Large Potatoes or 4 medium size
1/2 Large Sweet Onion peeled
1 Heaping teaspoon Cajun Spice
1 Heaping teaspoon Onion Powder
1 Heaping teaspoon Garlic Powder
1 Heaping teaspoon Paprika
1 Heaping teaspoon Dried Parsley Flakes
1/4 Cup Chicken Broth
4 Tablespoons of Olive Oil
Directions
Blend all spices in a small bowl and set aside.
Halve potatoes lengthwise.
With flat side down, slice potatoes thinly (Not Shaved) about 3/16 inch
Add Olive Oil to a large skillet over medium heat to coat bottom of pan.
Add Potatoes to skillet and brown for about 5 minutes.
Add Onions and stir until fully mixed with potatoes.
Sprinkle spices over potato mixture and carefully stir and flip mixture until all spices are evenly blended. with mixture.
Continue to cook for about 10 minutes while stirring frequently.
Add Chicken Broth to mixture and blend broth until broth blends with spices and mixture.
Lid the skillet and simmer until potatoes are soft (Stir occasionally to prevent over browning potatoes).
Serve immediately.
