This Irish inspired treat can be a regular item on your dinner menu without waiting for a special occasion. Always delicious and tasty. A true comfort food for the family.
Ingredients
1/2 Bag of Baby Carrots
10 baby Red Potatoes quartered
1 Large Onion or 2 Small Onions quartered
3 Cups of Beef Broth or Water (Broth will add additional flavor)
1 Can of Beer (Darker the better) but any beer will work (If wanting Gluten Free use additional broth or water in place of beer
1 Corned Beef Brisket (3 or 4 pounds) with spice pack
1/2 Head of Cabbage coarsely chopped into 1.5 inch chunks
Dried parsley
Steak Seasoning
Directions
Spray inside of Slow-cooker with spray oil and preheat cooker on high
Place Carrots, Potatoes, and Onion into bottom of Slow-cooker and pour in the Broth or Water
Add Brisket fat side up and pour Beer over the Brisket
Sprinkle spice pack over the brisket fat and cover with lid
Cook brisket for 7 hours on high
After 7 hours, skim fat from brisket and generously add Steak Seasoning and Dried Parsley over Brisket
Add cabbage to pot and cook another 1 to 1.5 hours prior to serving
Shred Brisket prior to serving
