Chicken & Lemon Caper Sauce

Simple and tasty. You can't beat the flavor of wine and lemon with salty capers. Add some fresh chopped Parsley or Asparagus cuts to the sauce and enjoy it with any kind of meat.


Ingredients

  • 2 Large Chicken Breasts halved into 4 filet pieces (You can substitute Chicken with Pork Cutlet or even Seafood filets with this sauce).

  • 1/2 Cup Corn Starch (Argo brand is gluten free, not all corn starches are gluten free safe)

  • 2 Tablespoons of Salted Butter

  • 2 Tablespoons of Olive Oil for frying

  • 2/3 Cup of Chilled White Wine (Chardonnay produces the best cooking flavor, but any white wine will do).

  • 1/3 Cup of Chilled Lemon Juice

  • 1 Small bunch of Fresh Parsley roughly chopped.

  • A generous amount of Brined Capers to dominate the flavor.

Directions


Meat

  1. Halve 2 Large Chicken Breasts into 4 filet pieces (You can substitute Chicken with Pork Cutlet or even Seafood filets with this sauce).

  2. Remove any fat and ensure meat is dry.

  3. Dredge meat into Corn Starch (Argo) and coat well. (No need to spice as sauce will neutralize the spice flavor).

  4. Add 2 tablespoons of oil to a large skillet and fry filets until golden brown and internal temperature is 145 degrees. Place cooked filets on your choice of surface to drain off excess oil.

Sauce

  1. Drain excess oil from skillet.

  2. Add 1 heaping teaspoon of gluten free Corn Starch in a measuring cup. Slowly pour Wine and lemon juice into cup while stirring to create a slurry. Allow to sit a bit to ensure starch is saturated in mixture and mix again vigorously to ensure mixture has no clumps and is silky smooth.

  3. Slowly melt Salted Butter by rolling skillet over burner until butter is completely melted.

  4. Add cooked Meat, Wine and Lemon Juice mixture, Capers and Parsley into skillet and allow to simmer until meat is reheated and sauce thickens a little.

  5. Serve with grated Parmesan Cheese.
